A new sit-down restaurant concept called SideTrack is set to open this fall in the Rivermont area of Hixson Pike.
Owner Lawton Haygood is known for his three other Chattanooga-area restaurants: Canyon Grill, Boathouse Rotisserie and Raw Bar, and Sugar’s Ribs.
With SideTrack, he is trying to offer something new in the area.
“There’s really just not another location in this area that close to Rivermont,” Haygood said.
The restaurant will have American, Mexican and Asian offerings. It will have two signature dishes that Haygood first tried at his other locations.
The signature dishes, a grilled pizza and rotisserie chicken, aren’t cooked in traditional ways. The grilled pizza will be made over a wood-fired grill, and the rotisserie chicken will be cooked in a pizza oven.
“We have a pizza oven we don’t do pizza in and a pizza we cook on the grill,” Haygood said.
He said that the chicken is only put in the pizza oven at the end of its cooking cycle to crisp the skin.
In addition to these items, the menu will feature an array of appetizers-including grilled octopus and okra chips-sandwiches and burgers, full-sized entrées, and salads. The restaurant will also have a drink menu with six specialty cocktails, wines and bottled beers.
“My wife, Karen, and I created the menu,” Haygood said. “She did the hard work with the design [of the restaurant]; I stick to the kitchen stuff.”
The 4,800-square-foot restaurant will seat 140 people.
Haygood said it will first open with 20 to 25 employees Wednesday through Sunday. The restaurant will then open Mondays and Tuesdays after Haygood fills out his staff to 40 to 45 people and everyone is trained.
Haygood said that he has some highly skilled management and will be promoting two managers from his other restaurants to help run the new location.
“We have a lot of long-time employees that really wanted to grow,” he said.
SideTrack, located at 3514 Hixson Pike, is scheduled to open in mid-September.
